Chapter 01 · The Producer

A backyard natural from Muje Mesina, East Guji.

High in East Guji, in southern Ethiopia, a community of smallholder families grow coffee in their backyards. Their harvests come together at Muje Mesina washing station, 17 kilometres from Adola town. The three-hectare station is a shared centre for sorting, processing and drying each season's crop. The coffee grows at 1,980–2,200 metres in red clay soils. Harvest starts in November, with cherries picked by hand. For this natural lot they are floated to remove less dense fruit, then dried whole across 200 shaded beds for 12 to 15 days. The station also gives back. It has built two underground water sources, bringing clean drinking water to local families. Cofinet, our import partner, brought this lot to us.

Apricot jam, pear, almond.

Apricot jam gives it depth and a rich sweetness. Pear keeps it fresh. A rounded almond note settles in at the finish, like a fruit-filled almond tart. Comforting and full of fruit.
