Soft, silky and unmistakably berry. Velvet Berry is a natural Chiroso from Jairo Arcila, grown high in the Antioquia hills of Colombia. A slow 45-hour aerobic ferment pulls the fruit forward — raspberry and boysenberry up front, a wash of vanilla, and a smooth cream sweetness that ties it together. Fruit-driven, beautifully structured, clean to the last sip.

Where this batch is in its resting cycle
Perfectly good to drink anytime — this is just our guide to getting the most from it.
Why we suggest resting coffee

For many years we were taught that fresh is best for coffee. That's no longer the case, in fact it is the opposite. We're big advocates of letting coffee rest and age, much like we're used to doing with wine, but over a shorter span than your 2014 Pinot Noir. With espresso, after 2 weeks the coffee really starts to open up, and keeps going; we've drunk espresso 8 weeks off roast and it's tasted great. For filter, 6–8 weeks is when we see it come into a league of its own — honestly, we've equally been drinking it over 4 months off roast and tasting its best. This isn't to say you can't drink our coffee whenever — we love drinking a coffee through its ageing cycle to watch it open up.

Chapter 01 · The Producer

Chiroso from Jairo Arcila, grown high in Antioquia.

Jairo Arcila is one of Colombia's most celebrated producers — a name that means something to anyone who chases rare varietals and carefully-built ferments. Over the years he and his family have earned a reputation for taking exceptional lots and coaxing the very best from them, treating processing like a craft and the cup like the proof. Velvet Berry is exactly that kind of lot: the rare Chiroso variety, grown high in the cool Colombian hills and processed as a meticulous Natural. Only perfectly ripe cherries are hand-picked, floated and hand-sorted for uniformity, then taken through a controlled 45-hour aerobic fermentation to build clarity and layered fruit. The cherries are dried slowly on raised beds under controlled greenhouse conditions, turned often for an even, stable dry. Cofinet, our import partner, work hand-in-hand with Jairo to bring lots like this to NZ — same hands, same care, traceable from farm to cup. We're lucky to have it.

II · In the Cup

Raspberry and boysenberry, soft cream, a clean vanilla finish.

First sip is all berry — raspberry and boysenberry, bright and juicy up top. Then a wash of vanilla and a soft, creamy sweetness rolls in behind it, silky and round. It finishes clean and elegant, the fruit lingering without ever turning sharp. Fruit-forward, beautifully structured, and very easy to love.

Chapter 02 · The Ritual

Brew it on filter and let it cool — the berries open right up.

Filter, slow. Orea 01 Raw is our pick — let the brew breathe and the berries come forward. Give it a moment to cool before you sip and the cream and vanilla round everything off. Pair with a slow morning and zero plans.
