Chapter 01 · The Producer

Jairo Arcila is one of Colombia's most celebrated producers — a name that means something to anyone who chases rare varietals and carefully-built ferments. Over the years he and his family have earned a reputation for taking exceptional lots and coaxing the very best from them, treating processing like a craft and the cup like the proof. Velvet Berry is exactly that kind of lot: the rare Chiroso variety, grown high in the cool Colombian hills and processed as a meticulous Natural. Only perfectly ripe cherries are hand-picked, floated and hand-sorted for uniformity, then taken through a controlled 45-hour aerobic fermentation to build clarity and layered fruit. The cherries are dried slowly on raised beds under controlled greenhouse conditions, turned often for an even, stable dry. Cofinet, our import partner, work hand-in-hand with Jairo to bring lots like this to NZ — same hands, same care, traceable from farm to cup. Raspberry and boysenberry, soft cream, a clean vanilla finish.
First sip is all berry — raspberry and boysenberry, bright and juicy up top. Then a wash of vanilla and a soft, creamy sweetness rolls in behind it, silky and round. It finishes clean and elegant, the fruit lingering without ever turning sharp. Fruit-forward, beautifully structured, and very easy to love.
