Why we suggest resting coffee

For many years we were taught that fresh is best for coffee. That's no longer the case, in fact it is the opposite. We're big advocates of letting coffee rest and age, much like we're used to doing with wine, but over a shorter span than your 2014 Pinot Noir. With espresso, after 2 weeks the coffee really starts to open up, and keeps going; we've drunk espresso 8 weeks off roast and it's tasted great. For filter, 6–8 weeks is when we see it come into a league of its own — honestly, we've equally been drinking it over 4 months off roast and tasting its best. This isn't to say you can't drink our coffee whenever — we love drinking a coffee through its ageing cycle to watch it open up.

Island Time is a celebration of the vibrant character found in Indonesia's coffee-growing highlands. Produced by the Poktan Rahayu Tani farmer group on the slopes of Mount Malabar in West Java, this naturally processed lot showcases the evolving quality and complexity of Indonesian coffee. Grown at 1,800 metres above sea level and dried in the fruit, it develops remarkable sweetness, lively acidity and a beautifully expressive cup that feels both refined and approachable. Naturally processed coffees from this region are prized for their ability to balance vibrant fruit with clarity and elegance. Slow drying lets the cherry impart greater sweetness and complexity to the seed, creating a cup that is layered, juicy and remarkably clean — energetic and refreshing while keeping the smooth, rounded body Java coffees are known for.

It opens on grape soda — sweet, fizzy, fun — before giving way to ripe guava and a soft hibiscus lift. A silky, juicy body is balanced by crisp acidity, so it feels fresh from the first sip to the last. Bright, playful and impossibly easy to drink.

Chapter 02 · The Ritual

Made for filter. Brew it bright and let the fruit sing.

Best as a pour-over — a V60 or the Orea 01 — to keep the grape-soda brightness front and centre. Serve it just off the boil, or chilled over ice when the sun's out. This is your slow-morning, no-rush coffee.
