Chapter 01 · The Producer

A blackberry co-ferment from Jairo Arcila.

Jairo Arcila is one of Colombia's most celebrated producers, and his experimental lots are why we keep going back. For Ultra Violet, ripe Castillo cherries are selectively hand-harvested, floated and sorted, then co-fermented with fresh blackberries before a careful wash and slow drying with close moisture control. Cofinet, our import partner, work directly with Jairo and his family to keep every lot traceable and the quality exactly where it should be — you might recognise his name from Starburst Soda, Gummy Bear and Velvet Berry.

II · In the Cup

Blackberry, blueberry, boysenberry ice cream.

Expect blackberry and blueberry straight away, deep and saturated. A creamy, boysenberry-ice-cream sweetness carries the middle, and a soft botanical note keeps the finish composed and long. Rich, purple and quietly wild.
