Chapter 01 · The Producer
A blackberry co-ferment from Jairo Arcila.
Jairo Arcila is one of Colombia's most celebrated producers, and his experimental lots are why we keep going back. For Ultra Violet, ripe Castillo cherries are selectively hand-harvested, floated and sorted, then co-fermented with fresh blackberries before a careful wash and slow drying with close moisture control.
