Coffee Care
Our coffees are carefully roasted to develop clarity, balance, and depth—but just like good wine, they need time to open up.
We recommend resting your coffee for at least two weeks after the roast date before brewing.

Espresso roasts tend to peak between 2–4 weeks post-roast.

Filter roasts, which are typically lighter, continue to evolve and can taste incredible up to two months after roasting—some, even at 8 weeks, reveal their best character.
Time allows gases to de-gas naturally, improving flavour clarity, balance, and extraction consistency.
Storage Tips
To keep your coffee tasting its best:

Store whole beans in a cool, dry place, away from direct sunlight or humidity.

Always keep the bag sealed or use an airtight container. Oxygen is coffee’s greatest enemy.
Freezing Coffee
If you’ve stocked up (or just want to extend the life of a coffee you love), freezing whole beans is a great option.

Freeze in small, airtight portions—ideally vacuum-sealed or in a tightly sealed bag with as little air as possible.

Only remove what you need, and brew directly from frozen—don’t thaw before grinding.
Freezing dramatically slows down ageing and can preserve flavour integrity for months.
A Note on Pre-Ground Coffee
If you’ve chosen to receive your coffee pre-ground, we recommend using it immediately after delivery. Grinding coffee accelerates oxidation—what takes weeks in whole beans can happen in days (or even hours) once ground.
We grind fresh to order, but pre-ground coffee is best enjoyed as soon as possible for full flavour and aroma. When possible, we always recommend whole beans for peak experience.
