A watermelon washed co-ferment from Jairo Arcila in Quindío.
Jairo Arcila is one of Colombia's most celebrated producers, and his experimental co-ferments have become a signature of our lineup. For this lot, ripe Castillo cherries are hand-harvested and sorted before a washed co-fermentation with fresh watermelon, then dried slowly and carefully to lock the fruit in place.
