Chapter 01 · The Producer

A watermelon washed co-ferment from Jairo Arcila in Quindío.

Jairo Arcila is one of Colombia's most celebrated producers, and his experimental co-ferments have become a signature of our lineup. For this lot, ripe Castillo cherries are hand-harvested and sorted before a washed co-fermentation with fresh watermelon, then dried slowly and carefully to lock the fruit in place. Cofinet, our import partner, work directly with Jairo and his family to keep every lot traceable and the quality exactly where it should be — you might recognise his name from Starburst Soda, Purple Haze and Cinnamon Honey.
