Where this batch is in its resting cycle
Perfectly good to drink anytime — this is just our guide to getting the most from it.
Why we suggest resting coffee

For many years we were taught that fresh is best for coffee. That's no longer the case, in fact it is the opposite. We're big advocates of letting coffee rest and age, much like we're used to doing with wine, but over a shorter span than your 2014 Pinot Noir. With espresso, after 2 weeks the coffee really starts to open up, and keeps going; we've drunk espresso 8 weeks off roast and it's tasted great. For filter, 6–8 weeks is when we see it come into a league of its own — honestly, we've equally been drinking it over 4 months off roast and tasting its best. This isn't to say you can't drink our coffee whenever — we love drinking a coffee through its ageing cycle to watch it open up.

Chapter 01 · The Producer

Grown by the Urban family on Rio Brilhante, deep in Brazil's Minas Gerais.

Custard Slice celebrates the comforting side of Brazilian coffee, sourced from Rio Brilhante in Minas Gerais and produced by the Urban family. With generations of farming experience behind them, the family has built one of Brazil's most respected specialty estates, pairing large-scale production with a real commitment to quality, sustainability and the surrounding environment. The coffee is machine-harvested then carefully hand-sorted for only the ripest cherries. It spends eight days drying under the Brazilian sun on concrete patios before a further forty hours in rotary dryers — building a clean, sweet profile while preserving the rich character of the natural process. A blend of Arara and Catuaí 62, two varieties well suited to the region's warm climate, it cups beautifully balanced and remarkably consistent.

Chapter 02 · The Ritual

An espresso made for milk. Pull it, pour it, enjoy.

This one shines as a latte or flat white — the custard-and-pastry sweetness cuts straight through steamed milk. Black espresso drinkers will find it smooth and low in acidity, easy any time of day.
