Roasted omni, so it's dessert as a V60 and pure nostalgia through milk. Playful up front, seriously crafted underneath.

El Encanto has become one of the farms we watch closest in Colombia — a family project with a knack for rare varietals and boundary-pushing fermentation. This lot is Bourbon Ají, a prized mutation known for intense aromatics and syrupy sweetness, taken through a carefully controlled yeast-inoculated natural fermentation that amplifies all that candy character while keeping the finish clean. It opens like the dairy on a hot afternoon — lemonade ice block brightness and pure gumball sweetness. Blossom florals lift the middle of the cup, and it lands soft and round, like the last sip of a creamy soda. Vivid, playful and impossible to mistake for anything else.
