Chapter 01 · The Producer
Jario Arcila, the co-ferment master of Quindío.
Jario Arcila is one of Colombia's most experimental and respected producers — a name that comes up in any conversation about co-ferment innovation. At Finca Las Margaritas, in Colombia's coffee axis, he and his team push processing in directions most farms wouldn't dare. This lot is Pink Bourbon co-fermented with rose tea and honey — a long, controlled fermentation that pulls floral and fruit complexity into a cup that already has more aroma than most. Rose, Turkish delight, lemonade iceblock, vanilla, mango.
Floral and perfumed in a way most coffees never get close to. Rose and Turkish delight up front, lemonade-iceblock cool in the middle, vanilla bean and ripe mango stretching the finish. Spectacular.
Chapter 02 · The Ritual
Slow it right down. Brew it as filter.
Co-ferments are just so fun. We know not everyone likes them but we believe they have a place in the modern world. V60 or Orea on a 1:17 ratio, water 92–93°C, slow pour. Don't rush it — the rose and Turkish delight bloom in the cup. Drink black, drink slow, drink twice.
