Chapter 01 · The Producer
El Indio, smallholders crafting Naturals in the Tolima hills.
El Indio is a tight community of farms in Colombia's Tolima region — high enough to slow the cherries, warm enough to ripen them properly. Cherries are picked at peak, then sun-dried slowly on raised beds for that syrupy Natural-process character.
